S'mores are a classic treat to enjoy in the summer time. But sadly all the ingredients that go into a s'more are harder to find without animal products. Marshmallows have an ingredient called gelatin that is not vegan. Gelatin is a mixture of leftover animal parts like bones, ligaments, and tendons. Not something I want to be putting in my body. Most graham crackers are made with honey which most vegans do not eat including myself. Chocolate is not hard to find without dairy but it can be challenging to melt without a campfire. So I will be including a recipe for chocolate sauce as well! Recipe video at the bottom of this post!

Marshmallows

Ingridients:

  • 2 tbs agar agar powder (not flakes, those are different)
  • 1 cup water
  • 2 cups organic cane sugar
  • 1/4 cup organic powdered sugar
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Directions:

  1. In a small bowl, combine agar agar powder with 1/2 cup of water. Mix until smooth then set aside for 10 minutes
  2. In a medium pot, add in remaining water and sugar
  3. Cook water and sugar mixture over medium low heat for about 5 minutes. Keep stirring until all the sugar has dissolved
  4. Add the thickened agar agar mixture to the hot sugar
  5. Bring heat up to medium high and boil for about 10-15 minutes without stirring
  6. The hot sugar mixture needs to come up to 240 degrees
  7. Once it has come up to temperature, pour the sugar mixture into the bowl of a stand mixer or a large bowl if using a handmixer (you can't really do this by hand)
  8. Mix on a low speed for about 3-4 minutes and add in the salt and vanilla. Do not touch the mixture for it is still SUPER hot
  9. Increase the speed to high and whip for about 15 minutes. Should get nice a white and fluffy
  10. Take a baking dish (I used a 3x9 inch pan but any smallish size will work) and coat pan with powdered sugar
  11. With a greased (I used coconut oil) spatula, carefully transfer the sticky marshmallow mixture into the pan
  12. Flatten the top out with the spatula and let sit at room temperature for at least 3 hours
  13. Once it has set completely, either turn out of pan then slice it, or cut the marshmallows in the pan and remove from there. These are toastable over a fire and perfect served with the homemade graham crackers!

Graham Crackers

Ingridients:

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup wheat germ
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup coconut oil, room temp
  • 1/2 cup brown sugar
  • 2 tbs agave nectar (or any other liquid sweetener of choice)

Directions:

  1. In a large bowl, combine both flours, wheat germ, salt, baking powder, & cinnamon. Whisk to combine
  2. In a smaller bowl, add the coconut oil and brown sugar. Whip with a whisk or hand mixer until light and fluffy
  3. Add in the agave nectar and continue to mix
  4. Add the wet ingredients to the dry ingredients and fold together with a spatula. You may need to use your hand to bring it all together at the end
  5. Bring dough together into a flattened round and wrap in parchment paper
  6. Place in the fridge for about 10-15 minutes to firm up
  7. Once the dough has chilled, unwrap the parchment flatten out with your hands
  8. Take another piece of parchment and roll the dough between the two pieces
  9. Roll out to about 1/8 of an inch thick
  10. Cut off the rough edges (same them) and make equal sized rectangles. You can also get creative and use cookie cutters
  11. Repeat with your scraps
  12. Place rectangles on a cooking tray and set the the freezer to firm up
  13. Preheat your oven to 350
  14. Once the oven is preheated, remove the graham crackers from the freezer and bake for 10-12 minutes or until golden brown. Make sure to turn the tray around halfway so the crackers can cook evenly
  15. Remove from the oven and let cool completley on the tray so they can get hard & crispy
  16. Eat them by themselves, with peanut butter, or in these s'mores!

or try vegan chocolate ganache

Ingridients:

  • 3/4 cup dairy-free chocolate (I used chocolate chips)
  • 3-4 tbs non dairy milk (I used almond milk)
  • 1/4 tsp sea salt

Directions:

  1. In a small bowl add chocolate and non dairy milk
  2. Melt over a pot of boiling water but don't let the water touch the bowl. Continue to stir until melted. (or you can melt in the microwave in 30 second intervals)
  3. Enjoy of pancakes, cupcakes, or in these s'mores which is my favorite way!
