Black-Bean Burger Bowl
Black bean burgers are a great source of fuel and fiber but store bought ones are full of unnecessary oils & preservatives. These burgers are full of flavor and super easy to whip up. You can even make a double batch to keep in your freezer for meal prep or even barbecues! I chose to enjoy mine in a nutrient dense buddha bowl but they are also great as a classic sandwich with all the fixins...lettuce, tomato, vegan cheese, ketchup, or vegan mayo. Black Bean Burger
Ingredients:
- 2-15 oz cans of black beans (drained and rinsed)
- 1 onion (I prefer red but white is good too)
- 2 cloves garlic (minced)
- 1 flax egg (1 tsp ground flax + 3 tbs water)
- 1/2 bell pepper, cubed
- 1/4 cup oat flour (make your own following these instructions)
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp chili flakes
- 1/4 tsp cayenne pepper
- 1 tsp dried parsley (or fresh if you can)
Directions:
- In a nonstick pan, saute onion and garlic until browned. Add in a couple splashes of water or add some extra flavor by using lemon or lime juice to cook them down
- In a food processor, add one can of beans, cooked onion & garlic mixture, bell pepper, and spices
- Pulse that until well combined. You may need to scrape down the sides to get everything incorporated
- Add in oat flour, flax egg, and remaining can of beans
- Pulse until just combined. Do not over process or there won't be much texture. the mixture should old together when pressed but may be a little sticky
- Form into about 5-6, two inch patties with about 1/3-1/2 cup of the mixture
- Place patties on a non-stick pan, preheated on a medium-high heat
- Cook each patty for about 10 minutes per side or until there is a crisp golden crust
- Serve in the burger buddha bowl, on a bun at a cook out, on a salad, or in a wrap!
The Best Oil-Free Fries:
Ingredients:
- 2 large russet potatoes, washed & scrubbed
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp black pepper
- 1/2 tsp salt
- add more spices if desired
Directions:
- Preheat Oven to 450
- Slice potatoes into fry shapes
- Place potatoes on a baking tray lined with parchment paper
- Season with spices and toss with your hands until every fry has been evenly coated
- Arrange fries in an even layer so they are not overlapping
- Bake for 40-45 minutes, turning the tray around half way
- Enjoy in this buddha bowl or with a side of ketchup and nooch :)
Assemble:
Directions:
- Add a couple handfuls of your favorite green to the bottom of your bowl. I chose kale and I steamed it first
- Layer some fries into the bowl (making it instagrammable is completley optional)
- Add in a couple patties
- Serve with some organic ketchup and fresh parsley
- Enjoy!
