Crunchy Kale Salad + Green Goddess Dressing
This is seriously the best salad ever and never fails to fill me up! The dressing is INCREDIBLE and can be used in so many ways including a dip. Packed with nutrients, fiber, and essential vitamins, this salad is wellness in a bowl.
Ingredients:
Salad
2 cups washed, chopped kale
1 cup shredded red cabbage
1 cup shredded green cabbage
1 cup shredded carrot
optional shaved watermelon reddish
Green Goddess Dressing
1/4 cup vegan mayo, or cashew cream sauce (1/4 cup raw soaked cashews + 1/4 cup water)
juice from 1 lemon
3 cloves garlic
1 bunch cilantro
1 bunch parsley
1 bunch dill
1/4 cup nutritional yeast
2 tbsp dijon mustard
1 tsp onion powder
1 tsp garlic powder
salt + pep to taste
a splash of water to thin it out if needed
Directions:
In a large bowl, combine all of your prepped salad ingredients and set aside
In a food processor or high-speed blender, combine all of the dressing ingredients
Blend on high for 2-4 minutes, scraping down the sides as needed
Once thoroughly blended with no large herbs intact, pour over the salad
Mix the salad well and serve! I like to add some tempeh or tofu on top with some micro greens but that is optional!
