GF & Vegan Banana Protein Pancakes

Valentine’s Day is coming up and I wanted to come up with a recipe that I would LOVE to receive from someone I love, so this is all of my favorite things in a breakfast food!

I am a SUCKER for waffles/pancakes on the weekends as well as making them for my meal prep for the week! This recipe is really easy to double (or triple) for a bigger crowd or for meal prep, and the heart shape is optional ;)

Ingredients:

  • 1 ripe banana, mashed

  • 1/4 cup maple syrup

  • 1.5 cups non-dairy milk

  • 2/3 cup gf flour

  • 3 scoops plant-based protein powder

  • 1 tbsp chia seeds

  • 1 tbsp ground flax

  • 2 tsp baking powder

  • chocolate chips that were measured with your heart <3

Directions:

  1. In a large bowl, add all the wet ingredients and mix well

  2. Fold all the dry ingredients into the wet until a thick batter forms. You may need to add more milk if the batter is too thick

  3. Stir in the chocolate chips

  4. Preheat a frying pan on medium-low heat

  5. Once warm, add 1/3-1/2 cup of batter per pancake to the pan and cover with a lid

  6. Let cook for 4-5 minutes or until you can lift it off the pan with a spatula

  7. Flip, and cook for an additional 2 minutes

  8. Serve with extra banana and maple syrup on top or store in the freezer for later meals!
