Spicy Vegan 'Meat' Sauce

This recipe has become a staple meal in my house recently and for good reason! it is so easy to whip up when you don’t feel like cooking a huge meal. Also, gotta love a good pasta dinner. This also makes great leftover so if you are meal prepping you can certainly double the recipe! Recipe video below!!

Ingredients:

  • 1 yellow onion, diced

  • 1 tbs olive oil (sub veg broth for oil-free)

  • 1/2 tsp garlic powder

  • 1 tsp dried basil

  • 1 tsp dried parsley

  • 1/2 tsp crushed red pepper flakes

  • salt and pepper to taste, about 1 tsp each

  • 1/4 cup nutritional yeast

  • 2, 6 oz cans of tomato paste

  • 1 package Trader Joe’s Vegan Chorizo (sub 1 cup textured vegetable protein, soaked)

  • 1-2 cups vegetable broth or water

Directions:

  1. In a large pan, add your onion and oil and let cook down on medium heat. Should take about 5-7 minutes

  2. Next, add your spices to the cooked onion

  3. Add the tomato paste and stir until a thick paste forms. You may need to add some your veggie broth to mix it completely

  4. Add your vegan chorizo or TVP to the tomato mixture. Break it up with a spoon or spatula

  5. Add some vegetable broth in 1/2 cup increments until you get the consistency you like. Add less broth for a thicker sauce and more for a thinner sauce

  6. Let simmer on low for 10 or so minutes. You can simmer for longer of course. The longer it cooks, the more flavor develops.

  7. Serve over your favorite pasta. I really like mine with brown rice spaghetti from Trader Joe’s!
