Classic GF Chocolate Chip Cookies
Well, the baking just doesn’t stop over here. With all this free time and boredom starting to creep in I can’t help myself! I have enough baking supplies to last probably another 2 weeks lol :) So you best believe I will make these 20 more times. These are seriously unreal!! I am a big fan of chocolate chip cookies if you couldn’t already tell but it has been a challenge to make them gluten-free with an authentic texture. I LOVE my paleo choc chip cookies. Those are my go-to ‘healthier’ cookies but this recipe is for cheat days. They are so fun to make if you are with friends or kids. They take some time but that is what makes them SO GOOD! Worth every second and every ounce of effort! I guarantee you won’t be able to tell these are vegan OR gluten-free.
Ingredients:
1/2 cup vegan butter, I use Earth Balance
1 tbsp nondairy milk of choice
1/2 cup organic brown sugar, packed
1/2 cup organic white sugar
1 flax egg (1tbsp ground flax, 3 tbsp water)
1 tsp vanilla
1 cup Bob’s Red Mill 1 to 1 Baking Flour
1/3 cup Trader Joe’s all-purpose GF flour (or use any combo of GF flour as long as it adds up to 1 1/3 cups)
3/4 cup almond flour
1 tsp baking soda
1/2 tsp salt
1 cup chopped dark chocolate
1/2 cup chopped walnuts (optional)
Directions:
In a large bowl, cream butter, sugar, and vanilla together until light and fluffy with either a hand mixer or stand mixer
Add in the flax egg
Next, add the GF flours, almond flour, baking soda, and salt. Mix until the dough comes together
Fold in your chocolate and walnuts
Cover and place in the fridge for at least 30 minutes. the longer it sits, the better
Preheat oven to 350 after your dough has rested
Scoop cookies on a parchment-lined baking sheet
Bake for 12-15 minutes or until golden brown
Let cool a little bit and enjoy them all at once or throughout your day. I bet they won’t last until tomorrow!
