Gluten-Free Oat Waffles

These waffles are perfect for a relaxed weekend morning. Since these waffles are made with oat flour they can be made gluten-free if you choose gluten-free rolled oats. They aren't hard to find. Most grocery stores have them. Just check the labels. I will walk you through step by step to make your own oat flour but you can also just buy in at your grocery store. Most places have it. You can put any topping on these fluffy waffles that you please, I chose a mixed  berry compote and maple syrup :)

Oat Flour: 

Ingredients:

  • Rolled oats (read the label for any gluten info)

Directions:

  1. In a high powered blender for food processor, pulse for about 5 minutes or until the oats have turned to a fine flour texture
  2. Store in an airtight container for up to 8 weeks, keep in the fridge for longer
  3. Use in most recipes that call for regular flour
  4. Enjoy!

Waffles:

Ingredients:

  • 2 tbs ground flax
  • 6 tbs water
  • 1.5 cups of oat flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup non-dairy milk
  • 1/4 cup unsweetened applesauce
  • 3 tbs maple syrup (or any other sweetener of choice)
  • 1 tsp vanilla extract

Directions:

  1. Preheat waffle iron (I like mine a bit more crispy so I put mine on the highest setting)
  2. Mix the flax and water and set aside in the fridge to set
  3.  In a large bowl mix the dry ingredients
  4. In a smaller bowl mix the wet ingredients and mix well
  5. Add the wet ingredients to the dry and gently fold together (at this point you can add any extras like chocolate chips or blueberries)
  6. Add about a 1/3 cup to you waffle iron (depending on the size), you may need to spray the iron so your waffle doesn't stick
  7. Cook until golden brown and crispy
  8. Serve warm or freeze them for up to 12 weeks
  9. Enjoy with your favorite fruit toppings and some maple syrup
