Easy Tomato Soup

This is one of the easiest soups I've ever made. It is perfect to make at the beginning of the week and then have it as leftovers. You can change up the spices and veggies you put in it to your liking!

Ingredients:

  • 1 medium onion (red, white, yellow, etc)
  • 3 cloves of garlic
  • 6 oz can of tomato paste
  • 2 tbs italian spices
  • 1 tsp salt
  • 1 tsp pepper
  • 28 oz can of crushed tomatoes
  • 15 oz can of tomato sauce
  • 1 cup veggie broth
  • 2 tbs nutritional yeast
  • 4 cups chopped kale (optional)

Directions:

  1. Dice onion and garlic
  2. Add to a large pot and cook for about 5 minutes with a splash of water
  3. Add in the tomato paste and spices, cook for another minute
  4. Add in the crushed tomatoes, tomato sauce, and veggie broth
  5. Then stir in nutritional yeast
  6. Simmer for at least 15 minutes
  7. Add in kale or other greens/veggies and let those wilt/cook
  8. Serve warm or save for later :)
