Oil-Free Granola

This is a super easy recipe that anyone can make! You can customize it with other nuts or seed. You can also add some cinnamon or even cocoa powder! You can enjoy this granola on its own, in a bowl with your favorite non-dairy milk, on top of smoothie bowls, on banana ice cream, or on top of non-dairy yogurt (aka the best way!)

Ingredients:

  • 2 cups rolled oats (regular oats quick oats work)
  • 1 cup puffed rice
  • 1/4 cup wheat germ
  • 1/4 cup pumpkin seeds
  • 1/4 buckwheat
  • 1/2 cup coconut chips (unsweetened)
  • 1/2 almonds (chopped, whole or sliced)
  • 1/2 cup cashews (halved, chopped, whole)
  • 2 tbs chia seeds
  • 1/2 cup dried fruit (optional)
  • 1 cup maple syrup

Directions:

  1. Preheat the oven to 350 degrees
  2. In a large bowl mix all the dry ingredients and dried fruit
  3. Add in the maple syrup and mix until everything is coated evenly
  4. Pour mixture onto two parchment lined baking sheets
  5. Spread granola out into one layer so it can cook evenly
  6. Bake for 20 minutes, stir halfway through
  7. Let cool on the tray for at least 10 minutes so it can harden up
  8. Enjoy!
