Chickpea + Kale Curry
In the colder months, all I ever want is to cozy up with a warm and nourishing bowl of curry! It is the perfect meal in my opinion. You can have rice with it, add as many veggies in as you want, and there are always leftovers! It is also super easy to make. You can totally change up the veggies you include in this recipe. It is very versatile!
Ingredients:
1 tbsp olive oil
1 yellow onion, chopped
2 cloves of garlic, minced
2 tbsp curry powder
2 tsp turmeric
salt and pepper to taste
1/4 tsp crushed red pepper
1 can chickpeas, drained and rinsed
I can of coconut cream
1/2 pound washed kale (if you don’t like kale, use spinach!)
Directions:
Add the oil, onion, garlic, and spices to a large pan. Cook on medium-high heat or until cooked down and fragrant
Drain and rinse the chickpeas and add to the onion mixture. Coat the beans in the flavor mixture and let cook for 2-5 minutes
Add the coconut cream and thoroughly combine
Let simmer for 10-15 minutes, stirring occasionally
Once the curry sauce has cooked down and thickened, add in the kale and cover until wilted. Should not take very long!
Serve with rice or other grain of choice! I also added pickled onions and sesame seeds :)
