Vegan and Gluten-Free Cinnamon Rolls

HEYO!!

Ever since I moved, I have been in a baking frenzy and this is one of the best creations I have made thus far! I know it’s only August but I have been craving fall treats for a while now and cinnamon rolls just sounded so good. These are yeast-free, meaning no proofing necessary AND I made mine in my toaster oven with the air fryer setting so they can be made in the air fryer!!!

Ingredients:

For the dough:

  • 3 cups gluten-free flour (I used BRM)

  • 2 tsp baking powder

  • 1/3 cup sugar

  • 1 1/4 cup nondairy milk

  • 1 flax egg (1 tbsp ground flax, 3 tbsp water)

  • 2 tbsp melted coconut oil

    For the filling:

  • 1/4 cup melted coconut oil

  • 1/3 cup brown sugar or coconut sugar

  • 2 tbsp cinnamon

    For the icing:

  • 1/4 cup vegan butter (softened)

  • 1 cup powdered sugar

  • 2-4 tbsp of non-dairy milk, adjust for the consistency you like

Directions:

  1. In a large mixing bowl, combine the dry ingredients

  2. Add the wet ingredients to the dry and mix until a dough forms. It will be sticky

  3. Next, combine the filling ingredients

  4. Roll out the dough on a well-floured surface to be about 1/4 inch thick rectangle

  5. Add your filling and spread it out evenly

  6. Start to roll the long side of the dough gently. It may start to tear so use the knife or bench scraper to help you guide the dough

  7. Once it is all rolled into a log, cut 2 inch rolls and place in a lightly greased baking pan. i got about 12 rolls. You can also place in a lined air fryer basket

  8. Air fry or bake at 350 for 30-35 minutes or until golden brown on the outside and gooey on the inside

  9. While the rolls are cooling, you can make your icing by combining the sugar and butter. I used a hand mixer but you ca also get a good arm workout in by doing this by hand. Add in your milk little by little until you have the consistency you like!

  10. Enjoy warm with a chai or on its own!
