Vegan + GF Pancake Cereal

YO YO YO!! It has been a minute since I have posted a recipe on here but I have been cranking out the recipes on my Instagram! This is one of the most popular ones from Quarantine so I figured I would post it here so you can always find it! Plus how CUTE is pancake cereal!! The full recipe and method are below along with a cute video!

Ingredients:

  • 1/2 cup almond flour

  • 1/2 cup gluten-free flour blend of choice (I like Bob’s Red Mill 1 to 1)

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1 cup nondairy milk

  • 1 tsp apple cider vinegar or lemon juice

  • 2 tbs maple syrup

Directions:

  1. In a mixing bowl, combine the dry ingredients

  2. In a liquid measuring cup or small bowl, combine the wet ingredients

  3. Add the wet to the dry and fold the batter together. Make sure there are no dry patched of flour

  4. Add the batter to some squeeze bottles (like these) or to a piping bag

  5. Heat a skillet to medium-low and grease with some earth balance butter or nonstick spray

  6. Pipe baby pancakes into the pan. I pipe them to be about the size of a quarter or 1inch in diameter

  7. Let cook for 3-4 minutes or until bubbles start to form. It does not take long so make sure to keep an eye on them

  8. Flip each pancake for 2 minutes and pour in a cereal bowl!

  9. Top with some extra maple syrup and a slab of vegan butter and ENJOY!!

  10. Oh and don’t forget to take adorable pictures!!
