Ginger Tofu Stir-Fry

Happy to be bringing you a savory recipe this week! I have been loving making simple stir-frys during the week because they are fast and make lots of leftovers! Also, they are very easy to make budget-friendly which I appreciate as a college student :) This recipe is very easy to customize and make your own! tag me in your pictures on Instagram, I love seeing your creations!

Ingredients:

  • 1 block extra firm tofu (preferably pressed)

  • 2 tbsp olive oil

  • 3 tbsp tamari (or soy sauce of choice)

  • 1 tbsp VERY thinly sliced ginger (or two frozen cubes! They have them at trader Joe’s)

  • 2 cloves diced garlic

  • 1 tsp chili flakes

  • black pepper to taste

  • 1 tsp onion powder

  • Thinly sliced veggies of choice (I like carrot, bell pepper)

  • Other veggies you have (I added broccoli and frozen edamame)

  • 1-2 cups rice noodles or cooked rice

Directions:

  1. In a large skillet, heat the oil, tamari, and spices

  2. Cube the tofu while the oil is heating up and add it into the hot pan

  3. Cook the tofu until browned and crispy on all sides

  4. While the tofu is cooking, slice your veggies thinly so they cook evenly

  5. Remove the cooked tofu from the pan and add the veggies to the hot pan. Add some water and let them steam with the flavor that is leftover from the tofu

  6. Once the veggies are cooked to your liking, add the tofu back in

  7. Next, add the cooked rice or noodles. If it seems dry, add some more tamari

  8. Top with fresh cilantro for an extra flavor punch!

  9. Enjoy!!
