Tofu Scramble and Oil-Free Crispy Hashbrowns
This is a nice change from the usual oatmeal, toast, and pancake breakfast I usually have. It's so filling and comforting. Super easy to make and packed full of nutrients! You can add whatever spices you want to make it more flavorful. Serves two!
Ingredients:
- 2-4 medium potatoes (I used red but russet would work too)
- 1 tsp garlic powder
- 1 1/2 tsp onion powder
- 2 tsp black pepper
- 1 tsp salt
- 1 block of firm tofu
- 1 tsp of turmeric
- 1 tsp black pepper
Directions:
- Turn broiler on High
- Wash and scrub potatoes (peel if desired)
- In a large bowl, grate potatoes with a large holes or you can spiralize
- Add seasonings and mix
- Line two baking sheets with parchment
- In a thin, put the potatoes on the baking sheet
- Pop in the broiler for no longer that 5 minutes, they get browned quickly
- Preheat a large pan on medium-high
- Add potatoes from oven to pan
- Let crisp up for 5-8 minutes, then flip and repeat on the other side
- In a smaller pan, add in tofu by breaking off small pieces (doesn't have to be perfect)
- Add in turmeric, pepper, and any additional spices you please
- Let that cook for about 10 minutes, it won't really change in appearance
- Serve with some fruit or avocado toast and enjoy!
