Tofu Scramble and Oil-Free Crispy Hashbrowns

This is a nice change from the usual oatmeal, toast, and pancake breakfast I usually have. It's so filling and comforting. Super easy to make and packed full of nutrients! You can add whatever spices you want to make it more flavorful. Serves two!

Ingredients:

  • 2-4 medium potatoes (I used red but russet would work too)
  • 1 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 block of firm tofu
  • 1 tsp of turmeric
  • 1 tsp black pepper

Directions:

  1. Turn broiler on High
  2. Wash and scrub potatoes (peel if desired)
  3. In a large bowl, grate potatoes with a large holes or you can spiralize
  4. Add seasonings and mix
  5. Line two baking sheets with parchment
  6. In a thin, put the potatoes on the baking sheet
  7. Pop in the broiler for no longer that 5 minutes, they get browned quickly
  8. Preheat a large pan on medium-high
  9. Add potatoes from oven to pan
  10. Let crisp up for 5-8 minutes, then flip and repeat on the other side
  11. In a smaller pan, add in tofu by breaking off small pieces (doesn't have to be perfect)
  12. Add in turmeric, pepper, and any additional spices you please
  13. Let that cook for about 10 minutes, it won't really change in appearance
  14. Serve with some fruit or avocado toast and enjoy!

Veganism doesn't have to be hard, unappetizing, or unhealthy. I here to show people how to make delicious healthy recipes free of many allergens like gluten but with an extra healthy twist. Many of the recipes are completley grain-free, refined sugar-free, oil-free, and made with ingredients that are of course plant based and as close to the whole plant form as possible. There less processed it is, the better. I also write blog posts on living a vegan lifestyle. Veganism isn't just about not eat animals and their byproducts, but also not buying leather or buying cosmetic products from companies who test on animals. I am here to help people on their journey to a life free of cruelty but full of positivity and happiness. I share my vegan story, cruelty free skin care routine, makeup routines, eco-friendly household products, ethical fashion, yoga and meditation, zero waste essentials, how to throw a vegan party, pantry essentials, and so many more!
