Chewy Tahini Chocolate Chip Cookies
If you know me at all, you know I am chocolate chip cookie obsessed. I have multiple recipes on here and they are all delish but this one right here…is the queen of the choc chip cookies. These are seriously life changing! All gluten free with no refined sugars. You can totally customize the recipe depending on what type of nut or seed butter you use. This recipe is adapted from Kale Junkie’s Recipe :) Recipe video below!!
Ingredients:
1 cup nut or seed butter of choice (tahini and almond butter are my fav)
1 flax egg (1 tbs ground flax, 3 tbs water)
1/2 cup maple syrup
1 cup almond flour
1 tsp baking soda
1 scoop vegan collagen (optional)
1 cup or more of dairy free chocolate chips
sea salt for on top
Directions:
Preheat oven to 350
In a large mixing bowl, combine your but butter, flax egg, and maple syrup
Next add the almond flour, baking soda, and collagen
Fold in the chocolate chips
Spoon about 1/4 cup of cookie dough per cookie on a lined baking sheet
Flatten the dough slightly and sprinkle with sea salt
Bake for 12-15 minutes or until crispy on the outside and golden brown
Once the cookies are done, let cool on the tray for 5 to 10 minutes (if you can wait!)
