Grain-Free + Vegan Chocolate Chip Cookies
I am the type of person who always needs to have something sweet after every meal. And sometimes gluten-free flours upset my stomach so this recipe has been a favorite for a long time. These are not only vegan, but they are paleo and great for the gut! These cookies are unreal and even if you don't follow a specific diet, I recommend trying these. They are killer good and take little to no time to whip up. You can also keep them in the freezer and pop them out when you need a little pick-me-up.
Ingredients:
2.5 cups almond flour
1/2 cup tapioca starch
1 tsp baking soda
1/2 cup almond butter
1/2 cup nondairy milk
1 cup coconut sugar
1 tsp vanilla extract
1.5 cups dark chocolate
Directions:
Preheat oven to 350
In a small bowl combine all the dry ingredients
Then in a larger bowl, cream together the almond butter, milk, coconut sugar, and vanilla
Add the dry ingredients into the wet ingredients and mix together to form a soft dough
Fold in the chocolate until evenly dispersed throughout the dough
Form dough balls with your hands and place them on a cookie sheet. I use about 2-4 tbs of dough per cookie
Bake for 12 minutes or until they are golden brown and crispy on the edges
Let cool and serve. Enjoy!
