Easy Mexican Beans
These beans make a perfect weeknight dinner because they cook so quickly! Just set it and forget it! I chose to make these in my Instant Pot to make this recipe even easier and faster! You can make these beans on the stove as well, but they will take a bit longer. See bottom for directions.
Ingredients:
- 4-6 cups soaked beans (at least 6 hours)
- 1 red onion
- 2 bell peppers
- 1/2 cup chopped sun dried tomatoes
- 1 can tomato sauce
- 1/2 cup of water
- 1 tsp cumin
- 3 tsp chili powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1/2 cayenne pepper
- 1 tsp ancho chili powder
Directions:
- In the pot of your pressure cooker place all of the ingredients and mix
- On the manual setting, set the instant pot for 20 minutes on high
- When the timer goes off, let the pressure release naturally
- After about 10-15 minutes open the lid, and serve

In a large pot, cook the peppers, onion, and dried spices until browned and fragrant
Add in the tomato sauce and water, bring that to a boil
Add in the beans and lower heat to a simmer
Cover and cook for 45-50 minutes or until the beans are tender and a thick sauce has formed
Fold in fresh cilantro and serve
