Loaded Nacho Fries

These loaded fries are a crowd pleaser for any party, potluck, or your lunch ;) They have a few elements but they are all very easy to make and you double or triple the recipe no problem for meal prep or large crowds. There are so many delicious flavors and layers, you wont be able to get enough of the them! Not to mention, completely oil-free, nut-free, gluten-free, & 100% delicious so everyone can enjoy them!

The Fries

 Ingredients:

  • 2 large potatoes, washed & scrubbed (russet, golden, sweet, etc)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • add more spices if desired

DIRECTIONS:

  1. Preheat Oven to 450
  2. Slice potatoes into fry shapes by cutting in half, then in half again, then cut the strips
  3. Place potatoes on a baking tray lined with parchment paper
  4. Season with spices and toss with your hands until every fry has been evenly coated
  5. Arrange fries in an even layer so they are not overlapping
  6. Bake for 40-45 minutes, turning the tray around halfway 
  7. Serve just like this or with ALL the toppings

The 'Cheese' Sauce

Ingredients:

  • 2 cups potatoes (about two russet potatoes)
  • 2 cups carrots (about 6 medium size carrots)
  • 1/2 cup nutritional yeast
  • 1 cup unsweetened non dairy milk
  • 2 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp salt

Directions:

  1. Start by boiling a large pot of water
  2. Peel, wash, and cut the carrots and potatoes in similar sized pieces so they cook at the same time
  3. Once the veggies are fork tender, about 10 minutes, drain them
  4. In a high speed blender or food processor, add the veggies, nutritional yeast, milk, vinegar, garlic powder, and salt
  5. Blend until the mixture is bright orange and has a thick, smooth texture
  6. Pour into a squeeze bottle (optional)   

Refried Black Bean Mash

Ingredients:

  • 1 can black beans, rinsed & drained
  • 1/4 cup veggie broth or water
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 black pepper

Directions:

  1. Cook bean in veggie broth until very soft, about 10-15 minutes
  2. Stir in all of the spices
  3. Mash with a fork for a chunkier texture or a potato masher for a smoother texture
  4. Serve

Assemble

Ingredients:

  • One recipe worth of Oil-Free Fries
  • about 1/2 cup refried bean mixture
  • 1-4 tbs of your favorite salsa (store bought or homemade)
  • about 1/4 cup 'cheese' sauce
  • Fresh cilantro

Directions:

  1. On a large serving platter or single serve plate (if it's just you) add a pile of fries as the base
  2. Dalop on the refried bean mixture generously
  3. Spoon of your salsa
  4. Drizzle liberally with 'cheese' sauce
  5. Top with some fresh cilantro
  6. Dig in!
