Lemon Garlic Smashed Potatoes

I have been loving roasting my veggies recently and figured I would share one of my favorite potato recipes. It is super simple and SO delicious. These potatoes are so addictive! I love them on top of salads or in a buddha bowl! These are perfect for meal prepping or for eating in one sitting :)

Ingredients:

  • 1 pound red or golden potatoes

  • 1/2 cup freshly squeezed lemon juice

  • 1 tbs grainy mustard

  • 3 cloves of garlic, finely chopped or pressed. The smaller the better

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried dill

Directions:

  1. Bring a large pot of water to a boil

  2. Chop potatoes in half and add to water

  3. Let boil for 10-15 minutes or until just fork tender

  4. Preheat oven to 425

  5. Drain potatoes and add to a prepared baking sheet. Either grease it or line with parchment paper

  6. Separate the potatoes so they are about an inch or so apart for each other

  7. Using a potato masher or large fork, mash the cooked potato one time to break the skin and expose the inside

  8. In a small bowl, combine the lemon juice, mustard, garlic, and spices

  9. With a pastry brush, brush the sauce onto each potato ensuring you are coating all the edges and covering the top

  10. Place in the oven for 20-30 minutes or until at desired crispiness

  11. Let cool for a minute on the tray. If you have any remaining marinade, coat the potatoes again

  12. Enjoy!!
