Hearty Immune Boosting Soup

It's that time of year when sickness is spreading. Believe it or not, not even vegans are 100% immune to illness :) But being vegan sure does help strengthen your immune system! If you do come down with something this year, fear not! This soup will help you combat that illness and get back up on your feet in no time! Full of essential vitamins and minerals to help give your immune system a boost! Spices like ginger and turmeric will help soothe sore throats, congestion, and belly aches. Plus the extra antioxidants from fresh lemon juice will clear the sinuses and give your an energy boost! This is soup is very simple and quick to make. The hardest part is chopping all the vegetables, which won't take more than 10 minutes! No sweating down onions, frying up spices, nothing! Just put all the ingredients in a pot and simmer. It's that simple!

Ingredients:

  • 3-4 medium potatoes, cubed (I like golden)

  • 3 medium-large carrots, peeled and chopped into coins

  • 1 large onion, diced

  • 4 cups vegetable broth or water (or a combo of both)

  • juice from half a lemon

  • 1 can pinto beans (or other bean of choice)

  • 2 tbs nutritional yeast

  • 1/2 tsp turmeric

  • 1/2 tsp ground ginger (you can also use about an inch of fresh ginger)

  • 1/4 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp dried parsley

  • 1/4 tsp dried rosemary

  • 1/2 tsp dried basil

  • 1 tsp salt

  • 1 tsp black pepper

Directions:

  1. In a large pot, add in all of the chopped veggies, broth, beans, and spices

  2. Use a spoon to mix it well then place on high heat

  3. Cover the pot and let it come to a boil

  4. Once it has reached a boil, reduce the heat the low and simmer for 15 minutes, stirring occasionally

  5. After 15 minutes, check to make sure the potatoes are cooked all the way. If a fork goes through them easily, it is done

  6. Serve right away with some fresh parsley on top and enjoy!

  7. You can also keep leftovers for up to a week or freeze for a later date
