Creamy Acai Bowl
Acai bowls aren't just trendy + cute (don't get me wrong, they are!), they are packed with nutrients and so much healthy fiber with loads of flavor! One of the best parts about them is the toppings. You can add some crunchy, textured toppings to you bowl to add even more deliciousness. They are super easy to make and customize, especially this one, which is just a basic guideline. I have decided that adding soaked nuts to my bowls is a great way to add some healthy fats, keep me fuller longer, and make it extra creamy!
Ingredients:
- 1.5 frozen bananas
- 1 acai pack (I get mine from Trader Joes)
- 1/4 cup soaked cashews (soaked for at least 4 hours)
- 1 tbs almond butter
- 1/4 cup frozen blueberries
- 4-5 frozen strawberrries
- 1/4 cup frozen pineapple
- 1/2 scoop of Ora Organic Renewable Energy Powder (optional but delicious!)
Toppings (all optional):
- sliced banana
- almond butter
- sprinkle of cinnamon
- shredded coconut
- chopped dark chocolate
Directions:
- Combine all ingredients into a high speed blender
- Blend until thick and creamy. Depending on the blender, you may need to add some liquid to allow it to blend. Just know that doing so will not make it as thick
- Pour into a bowl and top with your favorite toppings! Mine are listed in the Ingredients
