Grain-Free Brownies

Brownies are one of my favorite treats to make as part of my meal prepping for the week along with my paleo chocolate chip cookies. These brownies are the perfect balance of rich and sweet and have a super fudgy inside with a crispy top and edges. I don’t know about you, but that’s exactly how I like my brownies. These are perfect right out of the oven with a scoop of your favorite non-dairy ice cream but I have to say, they are 10x better the day after you bake them. The ingredients are super simple and are paleo, vegan, gluten-free, & refined sugar-free! They are basically air! haha jk jk.

Ingredients:

  • 1/3 cup natural almond butter

  • 1/2 cup coconut sugar

  • 1/3 cup maple syrup

  • 3/4 cup cacao powder

  • 1 tsp vanilla extract

  • pinch of salt

  • 2 flax eggs (6 tbs water, 2 tbs ground flax)

  • 1/2 cup almond flour

  • 1/2-1 cup chocolate chips, depending on how much you love yourself :)

Directions:

  1. Preheat oven to 350 degrees F

  2. In a large bowl, add the nut butter, sweeteners, cacao, vanilla, salt, and flax eggs. Use a rubber spatula to mix so it forms a uniform, slightly lose batter

  3. Gently fold in the almond flour and chocolate chips. The batter will be thick and moldable

  4. Pour the batter into a greased baking pan. I use a 6x8 pan

  5. Smooth out the top and press the batter into the corners to even it out

  6. Bake for 30-35 minutes or until the top is stiff and crispy and the edges have pulled away from the sides
