GF Chocolate Chip Oaties

I made this recipe on a whim because I was craving something sweet but didn’t want anything too heavy or rich. So I threw together a few ingredients I had and there you have it. These are super simple to make and they are so light and buttery. They are 100% gluten free (if you use GF Certified oats) and are made with less than 10 ingredients.

Ingredients:

  • 1 cup Almond Flour

  • 1 cup Rolled Oats

  • 1/4 cup unsweetened shredded coconut

  • 1/3 cup coconut sugar

  • 1 tsp baking powder

  • 1/4 cup dark chocolate chips

  • 1/4 cup drippy nut butter (almond, peanut, cashew, etc)

  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350 degrees

  2. In a large bowl, add the almond flour, oats, baking powder, and coconut sugar

  3. Use a rubber spatula to combine the dry ingredients with the chocolate chips, nut butter, and vanilla

  4. Mix the batter together until it forms a slightly sticky dough

  5. Line a baking sheet with parchment paper and scoop the dough into cookies. I use about 3 tablespoons of batter per cookie

  6. Bake for about 15 minutes or until the outside is golden brown

  7. Let cool completely on the pan and then enjoy!
