GF Chocolate Chip Oaties
I made this recipe on a whim because I was craving something sweet but didn’t want anything too heavy or rich. So I threw together a few ingredients I had and there you have it. These are super simple to make and they are so light and buttery. They are 100% gluten free (if you use GF Certified oats) and are made with less than 10 ingredients.
Ingredients:
1 cup Almond Flour
1 cup Rolled Oats
1/4 cup unsweetened shredded coconut
1/3 cup coconut sugar
1 tsp baking powder
1/4 cup dark chocolate chips
1/4 cup drippy nut butter (almond, peanut, cashew, etc)
1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees
In a large bowl, add the almond flour, oats, baking powder, and coconut sugar
Use a rubber spatula to combine the dry ingredients with the chocolate chips, nut butter, and vanilla
Mix the batter together until it forms a slightly sticky dough
Line a baking sheet with parchment paper and scoop the dough into cookies. I use about 3 tablespoons of batter per cookie
Bake for about 15 minutes or until the outside is golden brown
Let cool completely on the pan and then enjoy!
