Fried Rice and Crispy Tofu

This is one of my favorite recipes to make at the moment because it is so easy, affordable, and a great way to clean your fridge! You can add whatever veggies you like to make it customizable to your liking. This recipe makes about 6 servings so it is perfect for meal prep! I make this meal every two weeks usually for my meal prep and it never gets old.

Recipe:

  • 2 tbsp olive oil

  • 2 cloves of garlic, minced

  • 2-inch nob of fresh ginger, finely chopped

  • 1 large onion

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/4 tsp dried parsley

  • 1/4 paprika

  • 1/2 tsp turmeric

  • 1/4 tsp crushed red pepper

  • 1/4 tsp salt and pepper

  • 3-4 tbsp tamari or soy sauce

  • 2-3 cups of chopped veggies (examples: carrots, bell pepper, broccoli, peas, sugar snap peas, mushrooms, spinach, etc)

  • 2 cups cooked rice (cold leftover rice is best!)

Directions:

  1. Sauté your onion, garlic, and ginger in olive oil. Cook until fragrant

  2. Add in your spices and fry on medium-high heat

  3. Add in the tamari and the veggies. Cover and cook with the lid until all the veggies are cooked and soft

  4. Add in the cooked rice and let all the flavors soak into the rice!

  5. While the rice is absorbing the flavors, cook your tofu

  6. Add the Olive oil, maple syrup, tamari, and spices to a pan and let that get nice and hot

  7. Add in your cubed tofu and get each piece coated

  8. Let the tofu cook on high for 2-3 minutes or until golden brown and then flip around to crispen up each side!

  9. Add the tofu to the fried rice and serve! Also works great for meal prep :)
