Gluten-Free Chocolate Chip Banana Muffins

These muffins make the perfect quick breakfast or snack! Take less than 30 minutes to put together and bake too! Not to mention they are gluten-free and oil-free! That sound like a win win to me! If you have some ripe bananas lying around, be sure to use them to their fullest potential....in this recipe of course :)

Ingredients:

  • 4 ripe bananas (about 1 1/4 cups)
  • 1/3 cup sugar (coconut sugar, cane sugar, brown sugar. You can also your liquid sweetener (maple syrup, agave) but use 1/4 cup) 
  • 1 tsp vanilla extract
  • 2 cups oat flour (i used homemade but you can buy it or use any other flour of choice) 
  • 2 tsp baking powder
  • 1 tsb baking soda
  • 1/2 cup vegan chocolate chips (or more)

Directions:

  1. Preheat oven to 350 degrees F
  2. Place peeled ripe bananas in a large bowl and mash until you have the desired consistency (I prefer mine a bit chunkier) 
  3. Add sugar and vanilla extract and mix
  4. In a smaller bowl, mix flour, baking powder, and baking soda
  5. Add the dry ingredients into the wet ingredients and mix well (lumps are okay)
  6. Fold in the chocolate chips 
  7. Line two cupcake tins with liners (you probably won't need all 24)
  8. Scoop batter into each case until about 3/4 of the way 
  9. Bake for 10-15 minutes
  10. When they come out they should be golden on the top and when a toothpick inserted comes out clean
  11. Let cool and enjoy!
