Chia and Banana Buckwheat Pancakes
Buckwheat flour is a delicious alternative to regular white flour. With more fiber and protein, you can't go wrong with these pancakes. Not to mention they are oil-free too! The chia seeds add even more nutrients and give these pancakes a good texture. This recipe works great with oat flour, rye flour, and whole wheat! If you have a waffle iron, feel free to make this batter into waffles as well!
Ingredients:
- 1 1/4 cup buckwheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbs chia seeds
- 1/2 cup non-dairy milk
- 1 tsp vanilla
- 1 ripe banana, mashed (or 1/3 cup apple sauce)
- 3 tbs maple syrup
Directions:
- In a large bowl, whisk together the flour, baking powder, baking soda, and chia seeds
- In a smaller bowl, mix the milk, vanilla, mashed banana, and maple syrup
- Make a well in the flour and pour the wet ingredients into the dry
- Mix well until all the lumps are gone
- Heat a nonstick pan on medium-low heat
- Scoop about a 1/4 cup of batter for each pancake and smooth out with the back of a spoon
- Cook on each side for about 3-5 minutes. When the pancakes are ready to flip, bubbles will form on the top
- Serve warm with maple syrup, chopped bananas, or any other fruit of choice!
