Detox Vegetable Soup
So hearty and perfect for the cold season! Feel free to add in what ever veggies and spices you have...these are just the ones I was feeling today.
Ingredients:
- 1 medium onion
- 3 cloves of garlic
- 6 oz of tomato paste
- 1 tsp turmeric
- 1 tsp paprica
- 1 tsp rosemary
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- 1 bunch of celery
- 4-6 carrots
- 1 can of crushed tomatoes
- 6 cups of water or vegetable broth
- 4 bullion cubes
- 4 small sweet potatoes (cubed)
- 1/2 a head of broccoli
- 1 cup of frozen peas
Directions:
- In a large pot, cook the onions down for about 5-10 minutes until transparent (I used water instead of oil)
- Add garlic to the onions along with the spices
- Cook the spices for about a minute then add the tomato paste
- Add the celery and carrots to the pot and add the water
- Add the bullion, bring to a boil
- When the water starts to boil put the sweet potatoes in and cover for 10 minutes or until the potatoes are fork tender
- Add the broccoli and corn
- Cook for 5 more minutes
- Serve warm with quinoa or sliced bread and enjoy!
