Easy Vegan Personal Pizzas
Personal pizzas always taste so much better than regular ones in my opinion. Maybe it's just in my head or because they are more fun to eat :) I love choosing all my toppings and spices for each one differently so I have a variety of flavors. Making homemade pizza dough may sound a bit intimidating but it really isn't hard to do at all! This is a very simple recipe that everyone can make!
Ingredients:
pizza crust
4 cup unbleached all purpose flour
1 tsp coconut sugar
1 packet of active dry yeast
1 tsp salt
1.5 cups warm water
2 tbs olive oil (optional for a lighter, crispier crust)
toppings (use what you like, these are just my favorites)
Tomato sauce (Here's my recipe, you can also use store bought. Just check labels!)
Spinach
Roasted red pepper
Cooked broccoli
parsley
Roasted tomato
Nutritional yeast
Italian spices
Red pepper flakes
Directions:
In the bowl of a stand mixer with the dough hook attached or a large mixing bowl, add the flour, sugar, & yeast, mix
Incorporate the salt into the dry mixture
Add the warm water & oil
Mix until a dough ball forms. You are looking for a firm dough that isn't sticky when touched. You may need to add a few tablespoons of water or flour depending on your consitency
If you are using a stand mixer, use a fairly high speed & mix for 2-3 minutes until the ball is stiff & bounces back when pressed
If you are doing it by hand, turn the dough out onto a well floured surface & kneed for 5-10 minutes
Place the dough back into the bowl & cover with a towel. Place in a warm place for about 1 hour & a half to rise, you can leave it for longer to develop more flavor too
Once the dough has risen, preheat the oven to 425 degrees
Dump the dough out onto a floured surface & give it few kneeds
Divide the dough into 4-6 pieces depending on how big or small you want your pizzas to be
Flatten out the dough pieces with a rolling pin or use your hands to work the dough from the center out to create a nice round with thick crust
Place on a greased or nonstick pan & bake for 10 minutes
Take the crust out & load on your toppings of chioce
Place back in the oven for 10 minutes or until the crust is golden brown & the toppings are hot
Cut up and enjoy with extra nooch or Vegan Parmesan!
