Grandma's Oatmeal Waffle Recipe - Veganized

So when I was little, I would got to my grandparents house all the time and i used to love to have waffles for breakfast with powdered sugar on top when I was there. Typically they would be Eggos but sometimes my Grandma and I would make these homemade ones! They original recipe is from an old Better Homes and Gardens cookbook and was not vegan obviously. So I veganized it! They are cinnamony, lightly sweet, and get perfectly crispy on the outside. My Grandma basically has the BEST waffle maker ever. It is made out of cast iron and has been in the family for generations. It is much better for making these than my belgian waffle maker but that’s ok. They still turned out good. These waffles are great to have on hand if put them in the freezer. I was able to get four belgian waffles out of the recipe but you can probably get more with a smaller waffle iron. I have included the original recipe from the cookbook as well. My topping suggestions are below along with the recipe video!

Ingredients:

  • 1.5 cups all-purpose flour (or GF flour)

  • 1 cup quick oats

  • 1 tbsp baking powder

  • 1 tsp cinnamon

  • 2 flax eggs (2 tbsp ground flax, 6 tbsp water)

  • 1.5 cups non dairy milk

  • 6 tbsp of melted earth balance butter

  • 2 tbsp brown sugar (or sweetener of choice, coconut sugar works well)

Directions:

  1. Preheat your waffle maker

  2. Make your flax eggs and set aside to set up

  3. In a large mixing bowl, add the dry ingredients and combine

  4. In a smaller bowl, mix your flax eggs, non dairy milk, melted butter, and brown sugar

  5. Add the wet ingredients to the dry and fold together with a spatula

  6. Spray your waffle maker with cooking spray (I can’t stress this enough)

  7. Add the proper amount of batter to your waffle maker and cook according to the waffle maker’s instructions

  8. Once the waffle is done cooking and is golden brown and crispy, remove and repeat until you have used all the batter

  9. Serve immediately or save for later in the freezer

  10. Top with your favorite toppings! Mine include almond butter, crushed pecans, and maple syrup!
