Lactation Cookies

With my postpartum meal delivery kicking off, I figured I would share a favorite recipe from all the new moms! These lactation cookies are such a hit and a great add-on to their weekly delivery. These cookies would make such a great gift or surprise to a new mom. They are vegan, can easily be made gluten-free, and support milk production in lactating mothers. Also quite suitable for dads, kids, and other family! They are fortified with whole foods high in zinc, iron, iodine, healthy fats, and fiber!

Ingredients:

  • 1 cup vegan butter, room temperature

  • 3 tbsp almond butter

  • 1 cup white sugar

  • 1/2 cup packed brown sugar

  • 1 tsp vanilla extract

  • pinch of salt

  • 1.5 cups flour, gluten-free if needed!

  • 1/2 tsp baking powder

  • 5 tsp ground flax

  • 2.5 cups oats

  • 1.5 cups chocolate chips

Directions:

  1. Preheat oven to 375 degrees

  2. Line a sheet pan with parchment or Silpat

  3. In a large bowl, add the room-temperature butter and almond butter and beat until creamed. About 2 minutes. I recommend a stand mixer or hand mixer for this recipe!

  4. Next, add both kinds of sugars and beat for 5 minutes. It should be light and fluffy!

  5. Add in vanilla, salt, flour, and baking powder. Mix until just combined

  6. Add in the flax, oats, and chocolate chips and combine by hand with a rubber spatula until just combined. Do not overmix here!

  7. Form cookies with your hands by rolling 2-3 tablespoons of dough into a ball and lightly flattening on the baking tray

  8. Place 6 evenly spaced cookies on the cookie sheet and bake for 10-12 minutes

  9. When the cookies are done, they should be golden brown on the edges and soft in the middle!

  10. Let cool on the baking sheet for a few minutes before transferring to a wire cooling rack to completely cool!

  11. Enjoy!!

Veganism doesn't have to be hard, unappetizing, or unhealthy. I here to show people how to make delicious healthy recipes free of many allergens like gluten but with an extra healthy twist. Many of the recipes are completley grain-free, refined sugar-free, oil-free, and made with ingredients that are of course plant based and as close to the whole plant form as possible. There less processed it is, the better. I also write blog posts on living a vegan lifestyle. Veganism isn't just about not eat animals and their byproducts, but also not buying leather or buying cosmetic products from companies who test on animals. I am here to help people on their journey to a life free of cruelty but full of positivity and happiness. I share my vegan story, cruelty free skin care routine, makeup routines, eco-friendly household products, ethical fashion, yoga and meditation, zero waste essentials, how to throw a vegan party, pantry essentials, and so many more!
