Grain-Free Chocolate Chip Bars
Looking for a breakfast that can act as a dessert? Or vise versa? Well these bars are perfect! Packed with healthy fats & protein help fuel you for your day. Not to mention they can be enjoyed by almost everyone! No refined sugars, gluten, or oil! You can also make these as muffins for more convenience on the go.
Ingredients:
- 1/4 cup natural almond butter
- 1/3 cup coconut sugar
- 1 cup non dairy yogurt
- 1 tsp vanilla
- 2 cups almond flour
- 1/2 cup tapioca starch
- 1 tbsp baking powder
- 1/2 cup vegan chocolate chips
Directions:
- Preheat the oven to 350 degrees
- In a large bowl, combine the almond butter, coconut sugar, vanilla, & yogurt
- Add the almond flour, tapioca starch, & baking powder
- Mix until a uniform batter forms, will be pretty thick
- Fold in the chocolate chips gently
- Line a baking dish with parchment paper. 8x8 pans or smaller are ideal
- Place the batter/dough into the pan. Press it into all the corners and make it as smooth as possible on top with a spatula or your hands
- Bake for 35-45 minutes. When the bars are done, they should be slightly golden brown & firm on top
- Let cool for 10-15 minutes. Slice and serve right away or store in an airtight container
