Frozen Cookie Dough Bars

Well summer is upon us and damn it's hot. So what better way to cool off with a frozen, chocolate-y treat?!? The bars are completely no-bake (hallelujah) and take little effort. Not to mention, pretty healthy! Grain-free, refined sugar-free, AND gluten free! They are super rich and great to share with friends. These are also such a great activity to do in the summer with your family. Happy no-baking :)

Ingredients For The Bars:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup almond butter (or other nut butter of choice)
  • 2 tbs coconut oil, melted or if you want this to be oil-free, sub applesauce
  • 1 tsp vanilla
  • 1/2 cup - 1 cup vegan chocolate chips

Ingredients For The Chocolate Topping:

  • 1 cup vegan chocolate (bars, chips, etc with work)
  • 2 tbs almond butter
  • 2 tsp coconut oil (optional, just gives the chocolate a crispier crunch)

Directions:

  1. In a large bowl, combine the two flours
  2. Add in the remaining ingredients except the chocolate chips
  3. Mix the dough well until everything is incorporated. It should be thick enough to mold with your hands, if not add in more coconut flour 1 tablespoon at a time
  4. Gently fold in the chocolate chips
  5. Line a baking pan (I used a 8x8 pan) with parchment and press the dough into it. Make sure to get it in all the corners and pack it down with a spatula or your hands
  6. Place in the freezer for 20 minutes
  7. Begin making the chocolate topping by placing the chocolate, almond butter, and coconut oil in either a bowl (if microwaving) or a small saucepan. If you are microwaving it, heat for 30 seconds and then stir until it is melted completley. If you are using a pan, heat on low heat and stir it constantly until completely melted
  8. Once the bars are frozen, remove from the freezer and cover with the chocolate topping
  9. Smooth it out rather quickly because it will freeze fast
  10. Place back in the freezer for another 10-20 mintes
  11. Slice into bars, small squares, or whatever shape and size you fancy!
  12. Enjoy!
