Cinnamon-Maca Pancakes
These pancakes are perfect for an autumn brunch! The warm flavors of cinnamon, maple, and nutmeg really make this the perfect fall breakfast! The maca powder amps up the nutrients to make these perfectly satisfying! Not to mention they are gluten-free, refined sugar free, and oil-free! It's a win, win, win! Ingridients:
- 1 1/4 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ground ginger
- 1 1/2 tsp maca powder
- 3/4 cup non dairy milk
- 1 tsp vanilla
- 2 tbs unsweetened applesauce
- 3 tbs maple syrup
Directions:
- In a large bowl combine flour, baking powder, baking soda, spices & maca powder
- In a small bowl combine the non dairy milk, vanilla, applesauce, & maple syrup
- Add the wet ingredients to the dry ingredients and fold them together
- Preheat a nonstick pan on medium-low heat
- Add about a 1/4 cup of the batter to the pan and cook on each side for 5-7 minutes, or until golden brown
- Remove from the heat and place a plate
- I layered mine with some sliced banana and extra cinnamon, then added some maple syrup and some buckinis for a little crunch!
