Chocolate Oat Pancakes
If you know me at all, pancakes are life's work. I am always trying to come up with new ways to enjoy a god flapjack. I already have countless recipes on here but here is another one to add to your Sunday brunch bucket list. These pancakes have it all: chocolatey, oil-free, gluten-free, no refined sugars, AND easy! Ingredients:
- 1 cup oat flour
- 1/4 cup whole oats
- 2 tbs cacao powder
- 1 tsp baking powder
- 1/4 cup coconut sugar
- 1 flax egg (1 tbs ground flax, 3 tbs water)
- 3/4 cup almond milk (or other plant milk)
- 1 tbs unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (optional, but duh)
Directions:
- In a large bowl combine flour, oats, cacao, baking powder, and coconut sugar
- Then in a measuring cup whisk together the remaining wet ingredients
- Add the we mixture into the dry and gently mix
- Fold in the chocolate chips
- Heat a pan on medium-low heat
- Scoop your pancakes onto the pan and let cook unit bubbles begin to form and the surface looks drier, about 6-7 minutes
- Flip your pancakes for an additional 5 minutes
- Serve with maple syrup, almond butter, coconut chips, banana, etc!
