Classic Sugar Cookies
Such a nice treat around the holidays! These cookies are crunchy on the outside and soft and flaky on the inside!
Ingredients:
- 1 cup vegan butter
- 1 cup powdered sugar
- 1 1/2 teaspoons egg replacer (I made a flax egg)
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
Directions:
- Cream butter and sugar together in a large bowl
- Add vanilla and egg replacer
- Fold in the flour (if dough seems dry add some non-dairy milk)
- cover with plastic wrap and set in the fridge for an 1 hour to rest
- Preheat oven to 350
- Line baking sheets with parchment paper
- Scoop cookies and flatten down with bottom of a glass or your hands
- Bake in the oven for 10-15 minutes or until golden brown on the edges
- Let sit on the tray for 5 minutes and then transfer to a cooling rack
- After completely cooled you can decorate with chocolate, icing, sprinkles, etc.
