Classic Sugar Cookies

Such a nice treat around the holidays! These cookies are crunchy on the outside and soft and flaky on the inside! 

Ingredients: 

  • 1 cup vegan butter 
  • 1 cup powdered sugar
  • 1 1/2 teaspoons egg replacer (I made a flax egg)
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

Directions:

  1. Cream butter and sugar together in a large bowl
  2. Add vanilla and egg replacer
  3. Fold in the flour (if dough seems dry add some non-dairy milk)
  4. cover with plastic wrap and set in the fridge for an 1 hour to rest
  5. Preheat oven to 350
  6. Line baking sheets with parchment paper 
  7. Scoop cookies and flatten down with bottom of a glass or your hands
  8. Bake in the oven for 10-15 minutes or until golden brown on the edges
  9. Let sit on the tray for 5 minutes and then transfer to a cooling rack
  10. After completely cooled you can decorate with chocolate, icing, sprinkles, etc.
  11. Enjoy!
