Pumpkin Spice Loaf

This loaf is the perfect breakfast or dessert this season :) It's full of warm fall spices like cinnamon, ginger, & clove. Not to mention it's oil-free, refined sugar-free, & 100% delicious! This recipe is super quick to put together & I'm sure you already have all of the ingredients in your pantry right now! Full recipe video at the bottom of this post!

Ingredients:

  • 1 cup pumpkin puree 
  • 1 cup coconut sugar
  • 2 tbs maple syrup
  • 1/3 cup almond butter
  • 2 tbs molasses
  • 1 tsp vanilla
  • 1/4 cup non dairy milk
  • 2 1/4 cup flour
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp allspice
  • 1/4 tsp clove
  • 1/2 cup raw pumpkin seeds

Directions:

  1. Preheat oven to 350
  2. In a large bowl, combine the pumpkin, coconut sugar, maple syrup, almond butter, molasses, vanilla, & milk. Mix throughly
  3. Add in the remaining dry ingredients excluding the pumpkin seeds
  4. Fold together gently until a smooth batter forms
  5. Line a loaf pan with parchment paper (you can also try making this into muffins)
  6. Pour the batter into the loaf pan and smooth out the top with a spatula
  7. Sprinkle with the pumpkin seeds in an even layer
  8. Bake for 30-45 minutes. When it's done it sound be golden on top with a few cracks and when a toothpick inserted into the center comes out clean
  9. Let cool in the pan for at least 20 minutes then remove and slice into 1 inch slices
  10. Serve slightly warm for breakfast, for a treat after dinner, or anytime! It's that good :)
