Pumpkin Spice Loaf
This loaf is the perfect breakfast or dessert this season :) It's full of warm fall spices like cinnamon, ginger, & clove. Not to mention it's oil-free, refined sugar-free, & 100% delicious! This recipe is super quick to put together & I'm sure you already have all of the ingredients in your pantry right now! Full recipe video at the bottom of this post!
Ingredients:
- 1 cup pumpkin puree
- 1 cup coconut sugar
- 2 tbs maple syrup
- 1/3 cup almond butter
- 2 tbs molasses
- 1 tsp vanilla
- 1/4 cup non dairy milk
- 2 1/4 cup flour
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp allspice
- 1/4 tsp clove
- 1/2 cup raw pumpkin seeds
Directions:
- Preheat oven to 350
- In a large bowl, combine the pumpkin, coconut sugar, maple syrup, almond butter, molasses, vanilla, & milk. Mix throughly
- Add in the remaining dry ingredients excluding the pumpkin seeds
- Fold together gently until a smooth batter forms
- Line a loaf pan with parchment paper (you can also try making this into muffins)
- Pour the batter into the loaf pan and smooth out the top with a spatula
- Sprinkle with the pumpkin seeds in an even layer
- Bake for 30-45 minutes. When it's done it sound be golden on top with a few cracks and when a toothpick inserted into the center comes out clean
- Let cool in the pan for at least 20 minutes then remove and slice into 1 inch slices
- Serve slightly warm for breakfast, for a treat after dinner, or anytime! It's that good :)
